Read the manual.

L1 + O = Cross to the far post
L1 + [] = Lob with high gradient (best executed from outside the box when the keeper is off the line)
L1 + ^ = Chipped through pass
L1 + X = Does a one-two if you then press ^ before the second player receives the ball.
Just try them. Practice will give you better execution, timing and application.
L1 and X is short pass. L1 and O makes a cross from wherever you are. L1 and square is chip shot. L1 and Trinagle is a lobbed through ball, or to select the keeper when in defence!
But as Hitman says " read the manual" its all in there!!
Thanks for your replies guys, it was actually a typo
i meant to ask what does L2 plus each button do, where the symbol of the button appears in yellow next to the player name

They correspond with special tactics that you select when you go into the "manual" (or something) screen in the formations' screen.
You can use them to switch your strikers' sides, pull an offside trap, put on zone press, bunch of other stuff, including changing your entire formation.

There's a special thread as regards to tactics and such. It's called "Advanced Formations" done by jMz. Do a search for it. It's full of hints and expertise ;)
