There are 2 things you should care about when you're creating a player. First is speed and second is tenacity. They're almost untrainable unlike the rest of stats. In my opinion best player to start is around 75 ovr.

i started with around 80 on speed stats and around 70 tenacity, but all other starts are crap :/ around 62 points rite now, what i say is, will my player grow up fast to catch up to what a 75 starting player would be at the end of the season? should i skip some matches?

Don't skip matches, The more you play, the more clubs will pay.I have something for you, you might find it useful.Try this configurations when creating a player:
CF all arounder
1. 6ts shooting, 6pts power, 2pts dribbling
2. 6ts shooting, 6pts dribbling, 2pts speed
CB all arounder
1. 6ts defense, 6pts power, 2pts shooting
2. 6ts speed, 6pts power, 2pts defense
AMF all arounder
6pts passing 6pts dribbling 2pts speed

Repeat the process of creating a player until you get what you want.
And train " 1st touch" card, it's a must, because it will vastly enhance your player abilities to shoot pass trap and knock the ball.
