Amateur I think your beef with the video is the players they used to showcase/highlight the new tricks were the wrong type besides Ronaldo. Messi and de Rossi aren't flip-flap/roulette type players, they are simple yet efficient dribblers. Maybe they could have used Tevez do a roulette instead...

Nice guide. I've scored 3 FK goals in 100+matches in PES2010. One of them was an under the wall goal that I scored with Ashley Young.

Use R2/Right Trigger to put more arc on the ball, it helps when you have tall Fowards or defenders. It also seems to make the ball travel a bit farther.
