When defending cornerkicks,

how to get the goalie to come out to catch the ball?

I keep pressing triangle button, but the goalie never
moves out....

Switch to the goalkeeper manually using L1+R3. Position it yourself, you can always press L1 again to let the AI control the GK again once the GK comes out.
But beware sometimes manual positioning come with a high risk, especially when they pass it to the far post.
