Almost every game, the video game resets my starting lineup, which is quite frustrating. I have it saved now, but I sill have to load it frequently to have the players I want starting up (including some youth players that have slightly lower OPR than what the video game tries to start for me). Is there a way to stop that?

Check the settings. You might have accidentally set team selection to auto. You can turn this off.
