Play on 5* for the most strict refs. Yellows for all fouls and reds for all tackles from behind. Especially since you're playing multiplayer it's best to play on 5*. Give it a try and let us know how it goes.

i tried that but it is still ridiculous... i get absolutely smashed in every single tackle... from behind .. even not having the ball but no fouls... especially in the box ... is there no other way to change the ref settings?

Nope.
But there is a way to change the ref's strictness in WE7 and PES3.

There are no refs on the pitch in PES3. And no linesman either. And no 4th official. And no manager or players warming up.
