I don't think your stamina at the end of a match has any effect on your Mentality/Tenacity rating. I usually chase every ball in the scout match, even following a player the length of the pitch, and I make sliding tackles wherever possible - always end up with a Tenacity and Aggression above...

The .img files you need to open first are the ones in your PES install directory, not the ones in the patch.
