what Konami and FIFA get there player licensing from is called the FIFpro register thats is the register for all active footballers from each league (but some players are not on it for som reasons i do not know why), therefore if the player isn't active e.g. Zidane then Konami cannot license Zidane.

i wud hate to see preset faces go from pes 2011 but logically i dont think it will work as the new facial animations and sweat graphics wont be compatible with pes 2011 faces anyway we shall just wait.

pes 11 faces aren't compatablie with pes 12! :( o pc patch was done over at pes next gen blog and they transferred barcelona and iniesta had a default face, and i wouldnt think the presets would be transferrable anyway because of the new facial animations and sweat.
