I first downloaded an early version of one of the pesfan option files and have been editing away and keeping things up-to-date ever since. I also use djsaunders option file now and again which has all the premiership, championship and some league 1 sides in (great OF), but mostly my own.

The only way is to edit a team over another. e.g. I created Ipswich over PES United Hopefully there'll be a create new team function in the future.
