Another option is the Quick Search. In Season 1, these seem to mainly be Japanese players but I can recommend Takahara (top scorer in Div 1, second season 3*) and Okubu. They are all 3 star transfer probability.

Another option though I have not tried it, simply pass the ball forward (to no-one) and press R2, the player should then sprint after passing. On the other hand I might be talking complete ....

I don't think you can unlock an option to create a whole team from scratch. I think the best you can do is create the players you want in Edit mode then do the ML option you seem to already have picked (custom team) and try and buy your created players.

The manual says that created players have a minimum age of 17, perhaps that's true for all players and not just created ones ?
