It's best to make them up yourself if they don't exist. After playing the game for a while, and if you've a good enough eye for football, it becomes easier just to sit down and 'create' the whole list of the ability stats. in about a minute (further to many undecided pluses or minuses, of course).
I find one of the best bits of setting up is creating players you know, or waiting to see players in action you've only heard of and not been able to visually rate - realising for example that Adriano's heading and balance should be very high when you can see him doing his, er, thing.
