I used to defend by switching to a player close to the ball, running towards the attacker and pressing X to try to win the ball. I'd imagine quite a few people use variations on this, it works fairly well against the computer and is the most natural way to defend.
However, after getting constantly drubbed online in WE8LE, I switched tactics and had a lot of success with the "active player back" style of defending. This means keeping the player you control away from the ball handler and into the passing lanes, covering open players, etc., while holding down square to have another player harry the ball handler. This is a must use technique against human players, IMO. It works well in WE9 online too. Now I hold down square 90% of the time when I'm playing online.
