I have changed the control scheme so shoot is 'circle', pass is 'x', change cursor is 'L1' and sprint is 'R2', etc.

I was wondering whether the tutorial about feints and dribbles is still mapped to the same buttons as in the book or everything has changed according to the new mapping?

Should have changed according to mappings... but feints and dribbles are on L2 + Right Stick/Left Stick anyway, so these don't get affected by that, I conclude...
