I don't think so, what you upload to PS Plus are save files, which don't contain all the image data. The best way to backup your data is to export your edits into a usb (using the Export team option in the edit menu). That way, you can later import them in case anything goes wrong with your console.

Unfortunately not, we started working on these new teams around late May/early June, and the squads are still from 20-21 season. We are planning to continue this project but we don't know if we will update it on PES 2021 or on the new eFootball.
