it says they adapt to your play
yet i still seem able to just run down the wing with Ronaldo and put in a cross or pull it back and score time and time again
is it just automatically on or do you have to turn it on or off?

It's automatic. Higher difficulty levels should make it more agressive.

Saying that, i can't say i've really noticed it.

When I do play V/S the AI, I never really noticed the TeamVision. To be honest, it's you who made me remember it!
