There are differences for sure, alltho OP does have one point, the differences in alot of things are very minimal, for example ball control and speed and all that, it doesn't feel like an adequate difference with someone that has 80 vs someone that has 90 stat.

You`re right, but only ball control and speed are important.Between midfielders is not much difference,out pass.(for example positioning is same at midfielders).
