At the Player Settings page, there is an option "FIX".
How do U choose which player to play as?
(I've always been given the CF's role)

After you choose FIX mode, it should take you to the formation screen. Here you move the P1 button from the CF to whoever you want to start the match as.

During the match you can pause and go to the controller select screen where it gives you the option to change the player you are. I think this is done by pressing Square - this takes you back to the player select screen.
