It’s possible to run a screen capture application while playing the PC version of PES or any game.
I expect there are freely available screen capture software for Linux.
Having never used a PS3, I don’t know how you would configure a separate application to run while playing PES.

For PC there Gamecam and Fraps among others.
Have a search; I’m sure you will be able to find a free app that can record your goals.
