my 2 cents:
go to youtube.com and type "pes 2010 trick tutorial" or something like that. There are many videos that tell you what some of these moves are and how to do them.

Q1. no idea, but i assume is the same. maybe?
Q2. you press either R1 or R2 (can't remember which one) and then the directional up or down button to increase/decrease # of players. It's in the manual that comes with the game.
