Aside from the already mentioned 'jogging down the line, not being tackled' bug which is a bit of a worry, 2011 seems like a huge leap forward. What made you shake your head with previous games that 2011 seems to have fixed?
My main grumbles with 2010 were;
Passing - unless you used manual in 2010, the passing system was very 'on the rails' and seemed to me like your choices were to pass straight to (more often than not, the nearest) team member or play the lottery of a through ball, which either worked almost perfectly or was easily cut out. I love 2011's passing, the way you can pass into space at any time is great.
Pace/No Pace = Good player/Bad player - Not all good players have pace but all PES2010's good players did. 2011 seems like it has binned this and you'll be able to look at more than just the Top Speed/Acceleration/Dribble Speed/Accuracy stats when deciding who to buy in ML.
Keepers - not hugely better in 2011, but an improvement. This was pretty much the game-breaker for me as the other things I could turn a blind eye to or get over. Unfortunately, Konami very rarely seem to get keepers right and it seems instead to be a case of how not-wrong they get them.
