I'm not sure how good it will look but you could try finding someone in the game that looks similar and go to edit mode find that similar looking player, goto Appearance, and write down the values ie. Physique, Hair Colour, Skin Colour, etc. Then goto edit player and add yourself and then add the similar players attributes and alter the parts that you want.

It's probably not the best way but until you find someone who is good at making players up from scratch, its the best you'll get.

PS. There are people out there that can do it so I suggest you post this in a few PES forums.
