there at the start of any exhibition where u select the match settings time etc and they are random and un-changable in master league

Those defense / attackin arrows are in annoyingly "hard" place to get. Go to that menu where you can change your formation. Select "Edit" (menu where you can move players around the pitch) then press R2 or L2 to switch to Attack / Defence
