What I do to uncover the best youth talent is sign any young players, just to see their development path. If their potential is higher than my existing players in that position, then I reload the game and sign the permantly. It's a bit time consuming, but I think it's worth it.
I'm 2 seasons in to the game and the best player I have found so far is Cardozo (SMF, OM - Boca Juniors). His original stats are on the left and his stats so far are on the right. He's still only 18 so there plenty of room for further development!

best winger is already mentioned- Cases, but from the same club there is arzo DM and verza DM, both improve to far above 80's. best left back is drost, left winger ben arfa and from same club is good goalie but drops more clangers than a pissed niemi is hartock from lyon

Also, Buffon is past it and i need a highly recommended goalkeeper meaning a lot of people mentioning him...

well there are a few going around that are good. if you want more established GK's then someone like Hildebrand, Cavellero, Frey etc... my Gk since the start of the second season has been Penneteau, he's now 26 in season 4, but he's pretty damn good. young talent emerging later in seasons are ppl like the reborn Pagliuca. now he's amazing trust me. aside from that i'm not sure who to suggest mate.
on a slightly modified position, anyone looking for a great young centre back buy Martin Cranie. i got the guy as one of the 3 players you can have at the start with a created team and he's blossomed. he's at least 80's in everything but agility. the onnly downside are his condition and consistency, being 5 and 4 respectively, but he always players very well so don't let it put you off.
