Its done using the "play again..." thing in training. Everytime he beat one or two players, he'd record that replay, try to beat more, when he got tackled went back a few frames and tried again. Then editted the film so it looked like one long attack. notice how the video jerks every time he beats a man or two (plus also after he's hit the bar), Also notice just how long the replay is.

Video looks pretty good, though pretty obvious how it's done. And that little drag back thing that someone was asking about. its: Hold R2 Til you're facing goal, then press backwards whilst still holidng R2.
