Should be the free agent pool, as he'll be without contract having turned you down. Between New Years and the end of the season its always best to do a search with parameters (contract years 1-1). Then you can see which players on other teams have declined to renew and then try and sign them...

Buy big players with good balance ;-) Ok ok, not the most balanced side that way with 11 of them, but a big CF, CMFs and CBs can go a long way to retaining and knocking guys off the ball.

I've always preferred the widest/broadest angle PES has on offer. I was disappointed in PES2011 in this regard, as the broadest view of the pitch is less than in previous versions. The initial change from PES2010 to PES2011 took some getting use to.
