On the right analogue stick (R3) press up then down (or vice versa) to do the flick. It can set you up very nicely for a volley.

Hold the opposite direction to which you're going, at knee height, and you should perform the overhead flick.

As far as I know, the only major reward you get for collecting 100 hidden packages is the Hunter. Which I got after completing the game.
