You have to keep swapping disks because the disk space on the 360 isnt very good and therefore the game is too big to fit on one disk. If it was released on ps3 it would be able to fit onto one disk because blu ray disk space is pretty large (60GB i think..) I installed both disks to Xbox HDD...
