You need to scout the players before you can get to see their stats, add them to your scout list, and wait a few weeks.

I'm playing with the default squad, with WE united. I started out with about 27 mill or so. now in season 3 im sitting at 45 after all expenses paid in week 1 in september, and with a team with overall stats of 75+. not that hard to be honest.

Do you mean if players in the Master League will develop? then yes, all the players will see a stat increase or decrease, depending on their growth chart.

The teams from your league, and the teams from division 2 (I think) Will play in the cup. Or it could be the teams from your league only.

When trapping the ball, use the R2 when you recieve the ball, this will make your player handle the ball more tightly(?) to his body, allowing for more control, it's the same button when you want more ball control when dribbling.

I tried in the demo, I was in front with Bayern, when Barce got a corner and Valdes scored with a header in the 90+ minute. On your formations screen, you can choose players who will join attack, it's in the set pieces menu afaik.
