Use the two spare teams in the "other leagues" menu. The WE/PES teams are for this very purpose.

If you have enabled the option, then check your transfers menu. Do a search by group, and scroll down to the bottom of the menu. You should have the option for players and teams outwith the master league. In there you should find the classic players for transfer.
