Select the player who has the block with P1 beside his name by pressing X. Then simply select the player who you want to control.

The demo of PES3 didn't work for me, so I stood the PS2 up vertically, and it worked fine. I haven't had to do this with the final version but give this a try. I think by having the PS2 up this way, it brings the sensor closer to the disc, therefore reads it more easily.
