I know this has been the hardest thing to master in PES5 and has left many wondering why the likes of Henry and Martins are finding it difficult to pace past much slower players. I have almost mastered it and finding once you have managed to do so, the game play is much quicker than before so (I am finding it even quicker than PES4 when I really get going). So I give you my tips to getting past players and dribbling.
1.Before going past a player why not try and little trick or dummy first. Although it will not help in all situations (and I certainly am not saying to do so every time), a little step over or dummy shot can help by putting the opposing player off balance.
2.When going past a player, try to not dribble in exactly the same direction until you have started to clear the opposing player. Running alongside a player in the same direction will make it easier for the opposing player to put in a tackle. I usually change my direction slightly to make sure I am still running towards the goal but not in exactly the same straight line.
3.This is the hardest bit to master. You cannot hold down or continously tap R1 the whole time like you used to (well at least not when you still are finding it hard to dribble). The trick is to first getting your player in the direction you want to run. Then as you approach the opposing player tap R1 only occasionaly so that you can keep close control of the ball (and easily change line of running). As you edge past the player you increase the number or taps to leave the player chasing your shadow.
Note: When you are past your last man, be especially careful about tapping R1 when running towards or into the box as it is very easy to run straight into the keeper in PES5, as the keepers tend to rush out much more.
Hope I have helped! If you have any more questions about dribbling I am more than willing to answer them...
