u "cant" do it. When u download a DLC it saves in ur edit data. So if u want to go back to first version u have to delete ur save data from ur ps3 and start all over again.
A patch u can delete from ur ps3 too.

when you turn the PS3 on go to the folder Game Data Utility > the file will just say Pes 2012, nothing else, delete it and you go back to v1.0

do not go into folder SAVE DATA UTILITY, no need to delete your edit file or save file as that will wipe any editing, and also any unlocked items like Superstar mode etc

when you start the game it will say version 1.01 is out, just press cancel. of course you now can't play online
