Does anybody know, how i can change the names of all the stadiums and the balls??

In the Game Menu i can only change 8 of the 15 Stadium names.

What platform are you using? Usuallu you can edit all the names with PRO-EVO Editor 2008 V0.4 beta or PES 2008 O.F. Editor for PC.
