To answer the question in the thread title...
Looking at the screenshots, it would appear you can only choose from the set Champions League teams. However, there might be a function in edit mode which lets you edit the participants. Hopefully, you can do it, but I wouldn't be too confident.

would be good also if there was an option to be past winners of the champions league! remember it years ago on the champions league game on the PS1!

I hope it's not just the teams who are actually in the Champions League this year, because I'd rather play with Rangers & AC Milan than Cluj & Aalborg.
