I have no trouble at all scoring goals on this game. Infact I score some of the most ridiculous goals ever in this game. But where I really struggle is 1 v 1 with the goalie. I NEVER score. I always hit the goalie regardless of how I aim, where I aim, I ALWAYS hit the goalie and don't score on these easy chances. If I shoot to the left, to the right, to the center, upper left, upper right, lower left, lower right, etc. I hit the goalie EVERY TIME. What am I doing wrong when it comes to aiming?

try to turn just before you shoot so your at a angle much easier to score then and also do not get too close to the goalie are they nearly always save them if you do get too close you have to try a fake shot and take it round the goalie

press on the shoot button and immediately press on the short pass button, .i.e. when the shoot bar builds up. this works 90 % of the time and its your timing that does the trick. pointing to a particular direction can help u deviate your running direction and do a side step fake/ shoot fake.
