1) My background: I've played PES since PES2 on PS2 around year 2000. I sunk massive hours into PES back then. (Skill level: Played quite well in a championship on PES3. 1-player matches: Won on hardest settings. Nowadays average player, last played a bit PES13, no 14.)
2) Positive about old PES: I loved PES3 & PES6, after PES6 I haven't gotten the same feeling of "sublime, masterful, responsive soccer with an action feel". I liked the overall speed, hard shots, good free kick system, etc. The games felt responsive and immediate.
3) Current PES (on PS3): I don't like that PES2015 has slow turns - makes it hard to dribble and can get you caught with an interception even when you feel like you easily 'should' have had time to pass the ball, instead the player gets stuck in a too-long-animation and loses the ball. It looked better in a video I just saw, however, so maybe it's better on other platforms or in the finished version? *crosses fingers*
Also too slow acceleration, especially when running and receiving a pass or through-pass (loses too much speed). These two things together make me not wanna play much I'm sad to say - I don't want more of a sim, I want more fun. Hoping you'll find the magic sauce

I've always liked how the ball feels "heavier" in PES games than in FIFA. Might have to do with sound effects as well as physics engine.. this doesn't mean I want the ball to move slowly, though! I prefer high speed passing and hard shots over more realism
Other things to improve:
1) I would prefer the passing speed to be a tad higher.
2) I noted that the grass of the pitch looks bland. Popped in PES 2013 and there the grass looks much better
Not a biggie, as gameplay is much more important of course, but it kind of stood out graphics-wise.
