You couldn't control it for PES6 I don't believe, but you can on PES 2008. I'm just going off my 360 version here, but in the Formations screen, I think there's something toward the bottom called "Setplay Settings" and at the very bottom of that, "Player to go Up" is available. Then simply choose who you want to go up for the corners.

i bring only 1 centre-back up and depending how tall your left-back/right-back is i bring them up as it leaves a big gaping hole and the loose man punishes you

I've not tried this but:
As far as i can remember (on ps2) you can press all the shoulder buttons and X (triangle/square/circle) and that changes your play/formation. So if you set the defenders up as strikers would they not go up for corners?
I always used it for portugal (in PES6) to make figo and c.ronaldo swap wings.

i see what you mean but it would be a pain in the arse to keep changing and id want my forwards in there too, another major floor in the pes series

Before a match when ur on the formation settings go on 'Team' and select 'Team Strategy' and select 'A' which mean the back four push up more.
now when u have a corner and u want ur defenders up there u press and hold L2 and tap R1 untill the lil small icon next to ur players name goes 2 red. now ur defenders r runnin up to the box

Yeah, I usually use the L2 + R1/L1 to get defenders up for attacking corners/bring forwards back for defensive corners. As a tip, when you're taking a corner and you don't think you have enough men in the box, move to the red colour icon (all out attack) and change the set piece taker in the pause menu - when the new corner taker is ready to kick the ball, more players should have arrived in the box.
