Is there any known way to edit the camera angles in PES3, aside from the slim in-game choices? Would like something a little more pulled back. I ask as it was possible in FIFA games, with some tools, so am curious.

Im not so sure if you can. My friend tried to edit this and screwed up his pes3 and had to reinstall it. Ill have to ask him what file(s) he editied.

My friend has tried to change some strings to edit the camera settings but PES3 will not start so he is obviously doing something wrong.
