Can I make custom teams etc?

I want to be able to make like a premiership all stars and a south America all stars without ruining the existing teams on the game for example i don't want man city to lose robinho because he's in my south American all stars. - don't mind overwriting pony teams like hajduk and all that.

Use the two spare teams in the "other leagues" menu. The WE/PES teams are for this very purpose.

yeah but will it take the players off the original teams they play for?

Yes.

But what you could do is use the players of those teams and edit them to duplicate the players you want.
