the only way i found out how to do it was save kits in photos section on ps3 menu then when you go to edit mode on pes go to kit markings then to chest logo, click custom and create from scratch and then import data find the badge of the team you want, you will have to do the design of the kit urself, but you get the team crest and kit manufacturer and sponsors hope you understand this its fairly simple.
not sure mate, i can see what charlie is saying but this will only work with teams that you have templates for. i have put a request out for a the national team kit pack then, they will need to be created from scratch but i dont think there is a way to change the names of the uniforms.
