Szechuan shredded sesame chicken:
(serves 2; my fave recipe)
Ingredients:
2 Large or 3 medium skinless chicken breasts
1 egg white
1 tspn cornflour
1/2 tspn salt
2 tbspns sesame seeds
6 or so spring onions
2 tspn dark soy sauce
1 tspn chilli sauce
1 tspn sesame oil
1 tspn szechaun peppercorns (crushed)
3 tspn rice wine (or dry sherry)
1 tspn sugar
1) Slice the chicken breasts into fairly thin strips, put into a bowl & dust with cornflour & add salt.
2) Lightly whisk the egg white & add to chicken. Leave to marinade for 20 mins.
3) Slice the spring onions into 1 inch pieces & set aside.
4) Combine all the other ingredients (apart from the sesame seeds) in a small jug.
5) Fry the chicken strips in 2 tbspns oil, in a really hot wok. Set aside once chicken is white all over (only 1/2 cooked) on some kitchen paper.
6) Heat another tbspn oil until very hot & add sesame seeds. After about 10 seconds, add the sauce mix. It will sizzle & spit a little; do not shit yourself, remain calm.
7) Now return the semi-cooked chicken to the wok. Stir for a minute & add the spring onions.
8) Stir for about 2 more minutes & serve with plain rice.
