i found the best way to do the flip flap is to press circle, x - much in the same way for square x.

Eg. your players is running to the right, press circle-x and hold down+right, when the player feints to the right press up+right while he's doing it and once the feint is finished he will cut inside. Sometimes the player will use the other foot (his left) to cut inside, and sometimes, just sometimes, the flip flap is on show. Revell in your delight at megging your opponent and show them a clean set of heels.
