The thing about the knee might just be the sort of 'feint' you can do... It is where you're stopped with the ball then lean to one side as though you're going to go that way, when the player does this it looks as if hes kneeling on the ball-so that could explain the George Best trick thing...

As for the lollipop, dont have a clue what this is supposed to look like.
