Right this is what you have to do mate. First of all the i-tunes are actually m4p files. Which means they are MPEG-4 protected files so that's why you can't just load them with Ulead. All you have to do is convert them to mpa files with a program called Jhymn found here:

To use the program just add or drag your itunes into the box at the top. Then there is a drop down box with the word's "Convert locked .m4p to:" In the drop down box choose .m4a, then just click on convert.
Now after the conversion you will have your mpa file, now it is a MPEG-4 audio file.
Lastly load this file or files into the Xilisoft audio converter, Choose to encode them in into mp3 format. Then choose the destination folder and click on encode.
Now your i-tunes are in mp3 format and can be easily loaded with the Ulead program and any other media player. I tried this myself and it works a treat and can be done very quickly.
