What's the difference of setting defensive arrows to high or low?

does it have a recommended settings?

for example if you have a dmf set to high defense he rarely will go past the centre circle but if you have low defense he will join in in attacks and will be near the opposing box at times

What if i put allthe team Normal Defense, is it a good strategy.

Also, in a defensive formation does it help putting all the team HIGH Defense?
