You can definately do the flip flap pass on the demo with Ronaldo.

Make sure you're holding a direction to run in and tap R2 three times quite quickly. Do it too slow and he'll just do the step-overs.

Haven't been able to do it with anyone else.

Might be a combination of dribbling style and high stats, wont be able to check it out until the full version comes out though.
