how do you choose kit number in pes11 become a legend, at your first club?

You can't, it's not your choice it's the choice of the manager/coach, you may have a desired number for example RMF is usually (7) CF (9) etc...

i usually sign for a club that as 9 or 10 free and i usually get given one of them like

My team - desired shirt number.

If its already taken then you can get it later by earning it through manager rating.

I never really checked, but I only got the option to CHOOSE my number in my second season.

During the pre-season, you have the whole month to pick and choose between numbers but once you go into the season, it will be finalized.
