Omnipotence (Editing Countries)

I'm sure this has been asked before, but I can't find it.... sorry
So help a newbie once again with the following:

How can I edit a country's name, flag, etc?
'Cause I'd like to have other counties instead of, for example, Costa Rica..

just go to edit mode then edit team

err.. yeah..
not really, because you can't choose most options (like edit country name for example, which is quite a vital option when you want a different country in the game!)

option file editors should do it, or dkz studio or failing that hex edit the exe

Consider that I'm a REAL newbie, so...
Where can I find those? And are they hard to use?

I found an option file editor, but it can't edit more than I can do in-game.
It's quite usefull, though not what I'm looking for... it's called EditPES4OptionFile (by some guy named Yannick)
