Try them out. Pick a different one for each game and then choose the one that best suits you.

I've found that they are really strict this year. They give free kicks for the slightest touches

Correct. You don't have to lunge in. You can make the AI try to play round you. Stand off from tackling until you can see an opportunity to win the ball with a foot in tackle without fouling(this will happen), or just generally get in the way. Keeping a defensive shape works too, and the AI will make wayward passes, which you can intercept(playing on 5* as well, so it's not that it only does that on lower levels).
