What about when the Goalkeeper takes a short goal kick though. If the opposing player is in his own half he cannot be offside so he could just run down the empty field into your half and have a one on one with your keeper.

Having just checked the possiblilities for how many players you can get on each section of the pitch, it's like this:
Defence: Min 2, Max 5.
Midfield: Min 2, Max 6.
Attack: Min 1, Max 4.

The most attacking formation is a 2-4-4.
